Description
Traditionally, fermented buttermilk contains 7–10% total solids, including 3.5–4.9% lactose, about 0.5% lactic acid, 2.7–3.8% nitrogenous compounds and 0.6–0.75% ash. Fat content ranges from 0.3% to 1.0%.
